Molino Bertolo offers certified organic flours , the importance of this certification consists of products obtained from a production process that respects nature and obtained in a sustainable way. Organic farming is characterized by the ban on the use of GMOs , strictly limited use of additives food, severe restrictions on the use of pesticides and fertilizers. and with this commitment that Molino Bertolo has certified products and respects at heart the environment is, in particular, the health of its customers. Molino Bertolo offers its customers the KAMUT® certification, which guarantees the originality of a grain that comes from agriculture certified organic non-hybridized, unmodified and GMO-free allowing, over time, to maintain its originality and ancestral taste. The wheat KAMUT® has high standards of purity, nutritional values and quality: excellent source of protein, fiber, vitamin B1, magnesium, phosphorus, zinc, antioxidants, mineral salts such as copper, selenium and manganese. Food Safety System Certification Scheme 22000 is a certification scheme
developed by the Foundation for Food Safety Certification for the certification of
food manufacturing organizations and aims to harmonize the requirements of
certification and methods for obtaining food safety systems in the supply chain.
FSSC 22000, since February 2010, is recognized by GFSI - Global Food Safety Initiative,
born in May 2000 at the behest of the Consumer Goods Forum, an independent global network
which operates, among other things, with the aim of ensuring the distribution of goods
suitable for consumption (eg safe from a health and hygiene point of view) ai
consumers.
It brings together the Directors and Managers of about 400 organizations of
retailers and manufacturers, in 150 countries. The forum currently represents a value of 2.1
trillions of Euros.
Furthermore, since October 2010, FSSC 22000 has been recognized by EA (European Cooperation
for Accreditation). FSSC 22000 is the first security management scheme
food recognized by GSFI to receive 'acceptance from EA. This means
that all accreditation bodies in Europe will accept FSSC 22000.

The ISO 22005 incorporates the Italian standards UNI 10939: 01 relating to the "System of
traceability in the agri-food supply chains "and UNI 11020: 02 relative" system
of traceability in agri-food companies "and applies to all
agri-food sector, including feed production.
This standard is the international reference document for the certification of
agri-food traceability systems.
The implementation of traceability systems in companies and supply chains
agri-food is an indispensable tool for:
- respond to mandatory obligations,
- enhance particular product characteristics, such as origin / territoriality; and the peculiar characteristics of the ingredients,
- satisfy customer expectations (intended both as a large-scale retail trade and as a consumer the final).
The traceability system alone cannot guarantee security
of the food product, but it can certainly make an important contribution to
achievement of this goal.
In fact, if a hygienic-sanitary non-conformity occurs, it allows
on the one hand, to go back to the point in the supply chain where the problem originated,
on the other hand to proceed, if necessary, with the "targeted" withdrawal of the
product.
